Sugar Free Cheesecake

      6 eggs
      4 teaspoons Smoky Mountain Sweetener
      2 tablespoons lemon
      2 teaspoons vanilla flavor
      4 teaspoon liquid vegetable oil
      1⁄4 teaspoon almond extract
32 oz (1 quart) cottage cheese

Have all the ingredients at room temperature. Preheat oven to 350º. Put the first six ingredient in a blender, blend thoroughly, then gradually add cottage cheese until VERY SMOOTH. Pour into a long narrow loaf pan. Bake for 45 minutes or until cake is firm. Turn off oven and leave cake in oven with the door open for one hour. Remove from pan, place on double layers of paper towels. Sprinkle top with cinnamon and refrigerate. Flavor improves the longer it is kept. Makes approximately 10 servings.

1 can (8 oz) tomato sauce
      1⁄2 cup vegetable oil
      1 tbsp Worcestershire sauce
      3/4 cup white wine vinegar
      1 tbsp Smoky Mountain Sweetener
      2 tbsp uncooked quick oatmeal
      2 1⁄2 tsp chopped garlic
      2 tsp salt
      2 tsp yellow mustard
      2 tsp paprika
